Once in a while, my wife loves to make something that is easily done in no time. I don’t blame her. I feel the same exact way.

A month or two ago, my wife finally decided to create what I've craving for this past couple of months. To be honest, they looked so yummy and so easy to make. They looked so yummy like the ones I've seen when I was searching for egg muffin recipes on Google.
I was so thankful that my wife made some muffins. The ones she made were so super good. They were addictive. They were super delicious. As a matter of fact, she made 12 muffins, and they were gone within 2 hours. They sure were an instant hit.
She made two batches of 12 again that day so we could have some for dinner and take some to work for lunch. Good thing these muffins were so easy to be made. In short, she did not complain when I begged that she made those again.
These muffins became an instant favorite. Did I just repeat myself? Haha. Over the past couple of weeks, she has made several variations to suit what she prefers and what I like to eat during a particular day. It is as if these yummy muffins can be made with whatever ingredients we have. These muffins are so flexible and forgiving and you cannot make any mistakes when making these muffins.
That's what good about them. You can use the ingredients I have here as your base ingredients and you can add more ingredients if you want. You can add vegetables if you want some vegetables in this recipe. You can add sausage and take out beef to make the recipe as sausage and egg muffins.
The sky is the limit when it comes to what you can do with this recipe. So far, we have made 6 variations of this recipe and they are all so good. Honestly, I can't believe that this recipe is easy to make and is so cheap. That's not bad at all for this price. These muffins are healthy, hearty, and cheap. You can't beat that.

Super Easy Baked Beef, Egg and Cheese Muffins

Spray a 6-cup muffin pan with a non-stick cooking spray. Add a tbsp of the ground beef in each of the muffin lines.
Crack the eggs. Put each egg white in each muffin liner. Top it with a pinch of salt and pepper to taste.
Sprinkle 1 tbsp of cheddar cheese on top of the egg white. If desired, put more cheese.
Bake for 15 to 20 minutes at 350F or until the center of the muffin is completely cooked.
